Deep fried potato sticks

Let's say, you have some mashed potatoes from a day before. You have to admit, they are not so tasty after reheating. There is a way to improve their taste considerably with a little bit of work. As it is often the case, deep frying is a way to go. The recipe below is one my mom uses and I have a fond memories of eating potato sticks, when I was a kid.

Ingredients

2 cups (~500 g) of mashed potatoes
1 cup of grated cheese
2 tbsp of flour
1 egg
salt, chilli or cayene pepper


Preparation

Put all the ingredients into a large bowl and mix them throughly. Do not mix them too long as mashed potatoes tend to become more sticky the longer you work them. Take a small portion of resulting mass and roll it on a cutting board to form a long “snake”. Cut it into 5-7 cm chunks and deep fry for 2-3 min. Flip sticks on the other side and continue frying until they are deep brown.
An example of a serving – a salmon, corn on a cob and potato sticks. With ketchup or bearnaise sauce this dish is simply irresistible.
